Researchers at Edith Cowan University in Australia have made a significant breakthrough in food preservation. They have found that the hormone melatonin can effectively extend the freshness of perishable foods such as vegetables and fruits.
Challenges in Maintaining Freshness
According to Food Reviews International, approximately 40 percent of fresh fruits and vegetables lose their freshness during transportation from the farm to the consumer. The main culprit behind this loss is the cooling process during storage. Subtropical fruits and vegetables are typically stored at temperatures ranging from 4-8 degrees Celsius, but the ideal temperature for maintaining their freshness is 10-20 degrees Celsius.
The Potential of Melatonin
Researchers have discovered compelling evidence suggesting that melatonin can offer a solution to this problem. Melatonin is a hormone found in all living organisms and is primarily known for regulating sleep.
Benefits of Melatonin
The interaction of melatonin with fruits and vegetables has been found to mitigate the negative effects of cooling and enhance the integrity of their cell membranes by increasing antioxidant levels. Moreover, melatonin shows promise as a safe alternative to potentially harmful chemicals used in the food industry.
